Top Round opens on the Las Vegas Strip in 2022

A new home for roast beef sandwiches straight out of Los Angeles is heading to the Las Vegas Strip in 2022. Top Round from Anthony Carron of renowned 800 Degrees Pizza and Steven Fretz, who worked with Carron at Mina Group, takes over the former Bruxie space at the park, anchored by T-Mobile Arena, with a fast and relaxed rate.

Top Round, which is entering the Nevada market for the first time, offers roast beef marinated then slowly roasted for 10 hours, as well as breaded chicken sandwiches, fried fries and frozen custard.

The roast beef sandwiches come in five regionally inspired versions, including the Beef on Weck with chain atomic horseradish and a caraway and sea salt bun, or the Horse & Hole, topped with famous Provel cheese from Saint-Louis, horseradish cream and roasted mushrooms. Beef and Cheese includes homemade ‘Wizz’ cheese and an exclusive round sauce.

Fried Chicken Sandwiches use all-natural chicken, cured in buttermilk and pickle juice. Curly fries can be plain, with “Wizz” cheese, gravy or Dirty with gravy, Provel cheese, caramelized onions and round gravy.

Chicken wings, chicken fillets, vegetarian and gluten-free options such as crispy fried cauliflower wings served with house Buffalo sauce and choices of craft and draft beer complete the menu.

Once opened, the restaurant will feature a mid-century motor design reminiscent of the Los Angeles original. Diners can eat inside, head out to the terrace or order a take-out service.

Bruxie, which specializes in chicken and waffles, closed at the start of the pandemic and has never reopened. Also on the way to the park, Salt Bae and Nusr-Et Steakhouse. Sake Rok, the sushi restaurant, remains closed.
